If you could open a restaurant, any kind you want, what would it look like and what's on the menu?

Funny this should be asked because one of my lifetime dreams is to have my very own restaurant.
I would prefer it look like an ole timey diner or a shack on a corner somewhere - definitely nothing fancy. I would probably go with this place that I used to get plate lunches at back in Broussard, LA - a place called Norberts. Basically, an old house turned plate lunch eatery - if you follow my idea?
The menu would be Cajun style food based upon my own devices. Everything would basically be seasoned with Tony Chachere's, Red Pepper, Cayenne Pepper, Garlic, Onion, Green Pepper, etc... If you follow me here as well? I would definitely serve the classics - crayfish etouffee; sausage, red beans, and rice; jambalaya (chicken and sausage, pork, seafood, etc...); various stews; you get me. I would also have some various breakfast items available (some entirely not Cajun). Items like: egg(s) in a basket, omelets, sausage-gravy and biscuits, the usual breakfast suspects.
I am not much of a dessert person, but I would probably have bananas foster, bread pudding, cookies, and cakes on the menu for that part of the meal.
Anyway, it is a dream. A name, I need a name for it...???
